Jalapeno Cornbread

Ingredients

    • 1 Cup Cornmeal
    • 1 Cup Buttermilk
    • 2 Eggs
    • 3/4 Tsp. Soda
    • 1 Tsp. Salt
    • 1 Small Can Cream Style Corn
    • 2 Jalapenos - Chopped Fine (Fresh or Canned)
    • 1/2 Cup Oil
    • 1/2 Pound Grated Cheddar Cheese


Preparation

    • Mix all ingredients except cheese. Pour half of the mixture into a hot, greased pan and cover this with the cheese. Pour the rest of the mixture over this. Bake about 25 minutes in a 400' oven.
    • A Southwestern favorite with pinto beans. Use when calories don’t count!
