Nutted Wild Rice Salad

Ingredients

    • 1 Cup Wild Rice (1/2 lb)
    • 5.5 Cups Chicken Stock
    • 1 Cup Pecan Halves
    • 1 Cup Yellow Raisins
    • Grated Rind of 1 Large Orange
    • 1/4 Cup Chopped Fresh Mint
    • 4 Green Onions - Thinly Sliced
    • 1/4 Cup Olive Oil
    • 1/3 Cup Orange Juice
    • 1.5 Tsp Salt
    • Pepper to Taste


Preparation

Rinse rice under cold water. Simmer rice and chicken stock uncovered in medium sauce pan for 45 minutes (Check the doneness after 30 minutes; rice should not be too soft). Drain. Add pecans, raisins, orange rind, onions, mint, olive oil, orange juice, salt and pepper. Toss gently. Let stand for 2 hours. Serve at room temperature.
