Grilled Marinated Texas Quail

Grilled Marinated Texas Quail w/ Parmesan Cheese Grits & Sherry Maple Glaze

    • 6 quail
    • 1 lemon – zested
    • 1 t. chopped thyme
    • 1 t. chopped fresh garlic
    • 1/2 c. vegetable oil
    • 1 Tbs. balsamic vinegar
    • Kosher Salt and grill seasoning

Mix all ingredients and pour quail and marinate for 4 hours. Grill quail until slightly pink in the center. Cut quail in half and place on top of grits.


Sheery - Maple Glaze

    • 1/2 Cup Sherry Vinegar
    • 1/2 Cup Maple Syrup

Reduce to a syrup and spoon over grilled quail.
