Carrot Souffle

Preparation

Blend in blender or food processor until smooth:

    • 1 lb cooked sliced carrots
    • 1/2 cup melted butter


Add:

    • 3 eggs
    • 1/2-3/4 cup sugar
    • 3 Tbs flour
    • 1 tsp baking powder
    • 1 tsp vanilla

Blend together; pour into greased baking dish (3”deep). Bake at 350 for 45 minutes or until firm.
