Beer Braised Brats

Ingredients

    • 1/2 stick of butter
    • 1 yellow onion - coarsely chopped
    • 2 cloves of garlic - minced
    • 1 red bell pepper - julienned
    • 1 orange bell pepper - julienned
    • 1 pacakage of bratwurst
    • 1 beer (IPA)
    • Buns (optional)
    • Ketchup/Mustard (optional)


Preparation

    • Bring grill temperature up to ~400 degrees F
    • Melt butter in cast iron skillet over direct heat, then sautee the onion until it starts to caramelize
    • Add two cloves of garlic, sautee for 2-3 minutes
    • Add bell peppers, sautee for 3-4 minutes
    • Add the bratwurst and beer. Simmer over direct heat for a few minutes. Flip the brats, continue to simmer for ~5 more minutes
    • Move the pan to indirect heat. Simmer for a while to cook down the beer, flip the brats once more
    • Once beer is mostly reduced, not completely, move the brats to the grill over direct heat for 2-3 minutes on each side. Return to the pan and they are ready to serve
