Pork Chops with Roasted Tomato Salsa

Ingredients

    • 4 Large Pork Chops
    • 1 Tbs Fresh Sage
    • 1 Tbs Dijon Mustard
    • Olive Oil
    • 2 Tbs Cilantro
    • 1 Tbs Lemon Juice
    • Salt


Preparation

    • Marinate the pork chops in a mixture of 1 Tbs sage, 1 Tbs dijon mustard and 1 Tbs olive oil.
    • Grill pork chops until done, but still slightly pink.
    • Grill the following:
        • 4 small tomatoes
        • 1 red onion, quartered
        • 4 cloves garlic
        • 1 jalapeño
    • Mix with:
        • 2 tbs. cilantro
        • ¼ c. extra virgin olive oil
        • 1 tbs. lemon juice
        • Salt, pepper to taste
