Stuffed Manicotti

Meat Sauce

    • 1 lb Ground Beef
    • 1/2 Cup Chopped Onion
    • 1 Clove of Garlic - Minced
    • 1 1/3 Cup Tomato Paste
    • 2 Cups Water
    • 1 1/2 Tsp Salt
    • Pepper to Taste
    • 2 Tbs Chopped Parsley
    • 1 Tbs Basil

Brown meat, drain. Add other ingredients. Cover & simmer 25 minutes. Stir to prevent sticking. Add more water if needed.

Filling for Manicotti Noodles

    • 1 Carton Cottage Cheese ( Small Curd)
    • 1/3 Cup Romano or Parmesan Cheese
    • 2 Scrambled Eggs
    • 2 Tbs Parsley
    • 1/2 Tsp Salt
    • Dash of pepper

Turn off heat after eggs are cooked. Add other ingredients.

To Prepare Manicotti

Boil manicotti noodles according to package directions. Drain. Spoon filling into shells. Arrange in a single layer in a 7x11" Pyrex baking dish which has been sprayed with Pam. Pour sauce over all. Sprinkle with additional parmesan cheese. Bake at 350° until bubbly, approximately 30 minutes.
