Easy Hollandaise Sauce

    • 1 Egg Yolk - Slightly Beaten
    • 1 Tbs. Lemon Juice
    • 1/2 Stick Cold Butter
    • 1/4 Tsp. Dry Mustard
    • 1/4 Tsp. Salt

Place all ingredients in a saucepan. Cook over low heat, stirring constantly until butter melts and sauce is thickened.

Makes enough sauce for 6 muffins of Eggs Benedict.
