Spaetzles And Cabbage

Ingredients

Spaetzle

    • 2 Eggs
    • 1-1/4 Cup Flour
    • 1/2 Tsp Salt
    • 2/3 Cup Water


Cabbage

    • 2 Tbs Onion
    • 1 Small Onion - Chopped
    • 1/2 Cabbage - Chopped
    • Caraway Seeds (Optional)


Preparation

Spaetzle

    • Beat eggs and add flour and salt. Add water & mix until smooth. Drop a 1/2 teaspoon of dough at a time into a pan of salted boiling water. If the dough breaks apart in the water add more flour to the dough mixture as needed. Cook ~5 minutes, then strain. Place in serving dish with butter.
    • Note: the spaetzles may also be served independently and go well with and sauerkraut. If doing so, garnish with chives for color.


Cabbage

    • Saute onion and butter until soft and translucent. Add cabbage and stir fry until wilted and tender. Optional stir in dried caraway seeds to taste. Add the spaetzles as desired and continue to stir fry until some of the spaetzle becomes lightly browned.
