Danovi’s Italian Gravy

Ingredients

    • 1 Chuck Roast (optional)
    • 3 lbs of ground chuck
    • 1 lbs of ground sweet Italian sausage
    • 4 tablespoons of olive oil
    • 1/2 stick of butter
    • 3 large onions chopped
    • 2-3 large bell peppers chopped (optional)
    • 3-4 celery chopped (optional)
    • 10 cloves of garlic mashed
    • 1 teaspoon basil
    • 1 teaspoon rosemary
    • 3 large carrots (grind)
    • 2 bay leaves
    • 4 large (~10oz) Contadina Tomoato paste
    • 10 cans of hot water
    • 3 tablespoons chopped parsley
    • 1 package of mushrooms (optional)
    • 1 small glass of red wine
    • Salt & pepper to taste


Preparation

    • Sauté onions, peppers, celery in large pot
    • Add parsley, carrots garlic, all spices and mushrooms - cook until all vegetables are soft
    • Brown meat & sausage separately strain grease
    • Combine meat to veggies and pour in wine, simmer for 30 mins
    • Add tomatoes paste & water, salt & pepper to taste
    • Brown outside of chuck roast separately in garlic salt & pepper then add to gravy, cook low at least 4 hours
