Banana Cake
Serve With Chocolate Icing
Sift:
- 1 1/2 Cups Sugar
Beat Until Soft:
- 1/2 Cup Butter (1 Stick)
Add Sifted Sugar Gradually. Blend These Ingredients Until They Are Very Light and Creamy.
Beat in One at a Time:
- 2 Eggs
Sift Before Measuring:
- 2 1/4 Cups Cake Flour
Resift With:
- 1/2 Tsp Baking Powder
- 3/4 Tsp Soda
- 1/2 Tsp Salt
Prepare:
- 1 Cup Lightly Mashed Banana
Add to Banana:
- 1 Tsp Vanilla
- 1/4 Cup Sour Milk
Add the sifted ingredients to the butter mixture in about 3 parts alternately with thirds of the banana mixture. Beat the batter after each addition until it is smooth. Bake the cake in 2 greased 9 inch layer pans at 350° for about thirty minutes.
Cool the cake and then spread with Courtney's Chocolate Icing. If desired, place sliced banana in between the two layers.
