Cabbage Salad with Mint
Ingredients
- 1/2 Small Head Red Cabbage
- 1/2 Small Head Green Cabbage
- 1/3 Cup Lemon Juice
- 1/3 Cup Olive Oil
- 2 Tbs Dry Mint or 4 Tbs Fresh Mint
- 1/2 Clove Garlic
- 1 Tsp Salt
Preparation
Remove core and tough leaves of cabbage. Shred cabbage finely; rinse and drain well. Mash garlic and salt. Mix with lemon and oil. Pour over shredded drained cabbage and mix well. Sprinkle with dry mint.
