Cabbage Salad with Mint


    • 1/2 Small Head Red Cabbage
    • 1/2 Small Head Green Cabbage
    • 1/3 Cup Lemon Juice
    • 1/3 Cup Olive Oil
    • 2 Tbs Dry Mint or 4 Tbs Fresh Mint
    • 1/2 Clove Garlic
    • 1 Tsp Salt


Remove core and tough leaves of cabbage. Shred cabbage finely; rinse and drain well. Mash garlic and salt. Mix with lemon and oil. Pour over shredded drained cabbage and mix well. Sprinkle with dry mint.
