Spinach Orzo Salad
Ingredients
- 4 Cups (Taylor Farms) Organic Baby Spinach
- 3/4 Cups Uncooked Orzo
- 1/4 Tsp Lemon Zest
- 3 Tbs Fresh Lemon Juice
- 1 Tbs Extra-Virgin Olive Oil
- 1/2 Tsp Kosher Salt
- 1/2 Tsp Minced Garlic
- 1/4 Tsp Honey
- 1/8 Tsp Freshly Ground Black Pepper
- 1 Cup Shredded Skinless, Boneless Rotisserie Chicken Breast
- 1/2 Cup Diced English Cucumber
- 1/2 Cup Red Bell Pepper - Chopped
- 1/3 Cup Thinly Sliced Green Onions
- 1 Tbs Fresh Dill - Chopped
- 1/2 Cup (2-oz) Crumbled Goat Cheese
Preparation
Cook orzo according to package directions. Drain and rinse with cold water; drain and place in a large bowl. Meanwhile, combine lemon zest, lemon juice, olive oil, salt, garlic, and honey; stir well with a whisk. Drizzle juice mixture over orzo; toss to coat. Add chicken, dill, pepper, onion, cucumber, and greens; toss gently to combine. Sprinkle with cheese. Serve & enjoy!
