Compound Butter
Ingredients
2 Sticks of good butter (Drew preferred to use salted, Lawrence prefers to use unsalted),
1-2 Shallots
5-6 Cloves garlic (at least)
1/2 bunch cilantro (at least)
Preparation
Let the butter come to room temperature in a mixing bowl, or soften in a microwave.
Add finely chopped shallots, fresh cilantro, and fresh garlic. Mix with a fork. Note that the amounts of each were always eyeballed to preference, but you can’t use too much of any of it. Go heavy!
Lay out Saran Wrap and spoon the butter into a rectangular pile, wrap, and hand roll or “air spin” the butter mixture into a log.
Chill in the fridge, serve.
