Hino Chicken Curry Soup
Ingredients
- 2 Tbs Butter
- 1 Medium Onion - Chopped
- 1 Tsp Curry
- 1 48-oz Can Chicken Broth (~6 Cups)
- 1 Medium Potato - Peeled & Diced
- 2 Cups Sliced Celery
- 1 Tart Apple - Peeld & Diced
- 1/2 Medium Banana - Peeled & Sliced
- 1 Cup Sour Cream
- Minced Chives for Garnish
Preparation
Melt butter in a large saucepot. Saute onions in butter 'till brown. Add curry and cook 1 minute, stirring. Add the rest of the ingredients except the sour cream and chives. Heat to boiling, cover and simmer until vegetables and fruit are soft, about 30 minutes. Process with a blender on high speed until smooth. Blend in sour cream. Serve hot or cold, garnished with chives.
