- 1 Cup Cornmeal
- 1 Cup Buttermilk
- 2 Eggs
- 3/4 Tsp. Soda
- 1 Tsp. Salt
- 1 Small Can Cream Style Corn
- 2 Jalapenos - Chopped Fine (Fresh or Canned)
- 1/2 Cup Oil
- 1/2 Pound Grated Cheddar Cheese
- Mix all ingredients except cheese. Pour half of the mixture into a hot, greased pan and cover this with the cheese. Pour the rest of the mixture over this. Bake about 25 minutes in a 400' oven.
- A Southwestern favorite with pinto beans. Use when calories don’t count!
