Boiled Greens

As for the boiled greens, it is quite simple. You must use a large casserole, because the more water they have and the more comfortable they are in the pot, the greener they will turn out to be. You boil the water first and you salt it before putting the greens inside. once they are in, you stir them a bit and when the water starts boiling again they will start rising to the lips of the pot, so you will have to press them in the water with a large spoon or something. it shouldn't take longer than 10-15 minutes to boil them but of course you try the stems to see if they are soft. When they are ready remove them from the water immediately. Don't forget the olive oil and the lemon juice.
