Pork Chops with Roasted Tomato Salsa
Ingredients
- 4 Large Pork Chops
- 1 Tbs Fresh Sage
- 1 Tbs Dijon Mustard
- Olive Oil
- 2 Tbs Cilantro
- 1 Tbs Lemon Juice
- Salt
Preparation
- Marinate the pork chops in a mixture of 1 Tbs sage, 1 Tbs dijon mustard and 1 Tbs olive oil.
- Grill pork chops until done, but still slightly pink.
Grill the following:
- 4 small tomatoes
- 1 red onion, quartered
- 4 cloves garlic
- 1 jalapeño
Mix with:
- 2 tbs. cilantro
- ¼ c. extra virgin olive oil
- 1 tbs. lemon juice
- Salt, pepper to taste
