Cranberry & Kumquat Relish

"…such flavor, such grandeur, the zest of a heap of fruit concentrated into a few tablespoons ! "


  • 1 Cup Kumquats
  • 1/2 Cup Sugar
  • 4 oz. Orange Juice Concentrate (Frozen)
  • 2 Cups Cranberries (Fresh or Quick-Frozen)


Wash, dry, and slice the kumquats in half, removing as many seeds as possible. Place in blender or Cuisinart. Add orange juice and sugar. (Note: I have often substituted frozen apple juice concentrate for the sugar.) Blend until peel is coarsely chopped. Add the cranberries and blend just until the whole cranberries disappear. Chill thoroughly before serving.

This relish gets better and better as it stands, and keeps well in the refrigerator for several weeks. It also freezes well.
