Balsamic Vinaigrette


    • 2 Garlic Cloves
    • 2 Small Shallots
    • 3/4 Cup Extra Virgin Olive Oil
    • 1 Tsp Dijon Mustard
    • 1/4 Cup Balsamic Vinegar (Colavita)
    • 1 Tsp Sea Salt
    • 1/4 Tsp Freshly Group Black Pepper


Place garlic and shallots on a small square of aluminum foil. Sprinkle with salt, pepper, and a small amount of olive oil. Seal tightly and roast at 350 degrees for 35 minutes or until soft. Remove from foil, peel and place in a food processor or blender to mince with several on/off turns. Add oil, mustard, vinegar, salt and pepper. Process for several seconds. NOTE: if you do not have a food processor or blender, place the ingredients in a stainless steel bowl and use a wire whisk to incorporate all ingredients. Taste for seasonings, adding more salt and/or pepper to taste.
