Nutted Wild Rice Salad
Ingredients
- 1 Cup Wild Rice (1/2 lb)
- 5.5 Cups Chicken Stock
- 1 Cup Pecan Halves
- 1 Cup Yellow Raisins
- Grated Rind of 1 Large Orange
- 1/4 Cup Chopped Fresh Mint
- 4 Green Onions - Thinly Sliced
- 1/4 Cup Olive Oil
- 1/3 Cup Orange Juice
- 1.5 Tsp Salt
- Pepper to Taste
Preparation
Rinse rice under cold water. Simmer rice and chicken stock uncovered in medium sauce pan for 45 minutes (Check the doneness after 30 minutes; rice should not be too soft). Drain. Add pecans, raisins, orange rind, onions, mint, olive oil, orange juice, salt and pepper. Toss gently. Let stand for 2 hours. Serve at room temperature.
