Pear Salad
Ingredients
- 3 Quarts Mixed Bite-Size Pieces Red Greens (choose from Belgian endive, butter, leaf, mustard, oak leaf, radicchio, romaine, and salad savoy) - Rinsed & Crisped
- 2 Medium-Size Firm-Ripe Red or Green Anjou Pears - Cored and Thinly Sliced
- Hazelnut Vinaigrette (recipe follows)
- Salt & Pepper
Preparation
- In a large bowl combine greens and pears. Add dressing, and salt and pepper to taste; mix. Makes 6 to 8 servings.
Hazelnut Vinaigrette
Ingredients
- 1/3 Cup Chopped Hazelnuts
- 2 Tbs Salad Oil
- 1 Tsp Finely Shredded Lemon Peel
- 3 Tbs Lemon Juice
- 1/2 Tsp Sugar
Preparation
- In a 6- to 8-inch frying pan, stir 1/3 cup chopped hazelnuts in 2 tablespoons salad oil over low heat until nuts are golden, 5 to 8 minutes. Cool. Add 1 teaspoon finely shredded lemon peel, 3 tablespoons each lemon juice and water, and 1/2 teaspoon sugar
