Spinach Tomato Orzo Soup
1 medium onion - chopped
2 cloves garlic - chopped
1/2 lb fresh spinach - chopped
1 15-oz can diced Italian tomatoes (with oregano & basil)
1 can petite diced tomatoes
1/4 box orzo
Rotisserie chicken - shredded
1 quart (or box) chicken stock - more if needed
Parmesan cheese (optional topping)
Preheat a large pot. Drizzle with olive oil. Add onions and saute until tender. Add garlic and saute for 2-3 minutes. Add canned tomatoes, spinach, and chicken stock. Simmer for an hour.
Cook orzo separately per the box instructions.
Add orzo and shredded rotisserie chicken to the soup.
Serve topped with parmesan cheese
I cook my orzo separately. That way my family can use as much pasta as they like. Pasta also absorbs a lot of broth, which is another reason to cook separately.
