Steaks on the BGE
Ingredients
1-1/4 to 1-1/2" steaks
Ghee or duck fat or avocado oil
Salt & pepper
Preparation
Let the meat stand at room temperature for 30 minutes before grilling. Generously season with salt, and season with pepper to taste
Set up the grill for a DIRECT cook. Fire up the BGE to 600 degrees F
For 1-1/4" steaks - cook for 2.5 minutes on each side, then shut down all dampers for 3 minutes to finish medium rare
For 1-1/2" steaks - cook for 3 minutes on each side, then shut down all dampers for 3.5 minutes to finish medium rare
For medium rare PLUS steaks pull the steaks off at an internal temperature of 130 degrees.
Finish with a good knob of grass-fed butter on the top of each steak
