Olive Oil Vinaigrette or French Dressing
- 2 Tbs White or Red Wine Vinegar or Fresh Lemon Juice
- 1 Tsp Dijon Mustard
- Salt & Pepper
- 6 Tbs Extra Virgin Olive Oil
Combine the vinegar, mustard, and 1/8 teaspoon salt in a small bowl and let stand for 15 minutes. Then whisk in the oil, add it in a steady stream. Season with pepper to taste.
Peel and finely dice a shallot, then put it in a bowl with the vinegar and salt. Let it stand for 15 minutes or longer to sweeten the shallots. It also turns them slightly pink. Stir in the mustard and any other flavorings, then whisk in the oil.
