Country-Style Okra & Tomatoes


    • 3 lbs Fresh Young Okra
    • 10 Slices of Bacon
    • 2 Medium Onions - Chopped
    • 2 Tsp Salt
    • 8 Medium Firm Ripe Tomatoes - Peeled & Chopped
    • 1/2 Tsp Cayenne


Wash okra, let dry completely, and cut into 1-inch pieces. In a skillet, fry the bacon until crisp and brown. Remove bacon, drain and set aside. Add okra, onion, and salt to the bacon drippings in the skillet. Cook for 10 minutes over high heat. Lower heat, add tomatoes and cayenne and cook for 2 minutes, stirring constantly. Reduce heat and simmer for about 45 minutes, stirring frequently. Taste for seasoning. Serve topped with crumbled bacon bits.
