Buy good quality ground lamb and shape in to 1/2-pound patties. Spray burgers with Duck Fat spray, season with salt and pepper.
Light your Big Green Egg or Kamado Joe and preheat to 500°. Once at temp place the patties on the grill (direct) for 2 minutes per side. Then cap the grill (shut all the vents to choke from oxygen) and let the burgers sit in there for another 5 minutes.
Pull the patties off and let them rest 5 minutes so the juices settle. Serve with this special Greek Tzatziki (Cucumber Yogurt sauce).
A good addition are thick cut sweet onion slices that you grill at the same time as the lamb burgers.
