Pork Roast and Sauerkraut
- 8 Pork Country Ribs
- 2 Quarts Sauerkraut - Rinsed, Drained and Pressed to Remove Excess Liquid
- 1 Large Onion - Chopped
- 8 Carrots
- 4 Large Potatoes - Cut into Large Chunks
- 1/2 Cup White Wine
- Salt and Pepper
- Line the bottom of a large casserole dish with sauerkraut mixed with the chopped onion. Place carrots and potatoes on top. Add ribs. Sprinkle with wine and salt and pepper. Bake at 300º for approximately 4 hours.
- If desired, 1-2 sweet potatoes, peeled and cut into wedges can be added to the casserole.
