Pork Roast and Sauerkraut


    • 8 Pork Country Ribs
    • 2 Quarts Sauerkraut - Rinsed, Drained and Pressed to Remove Excess Liquid
    • 1 Large Onion - Chopped
    • 8 Carrots
    • 4 Large Potatoes - Cut into Large Chunks
    • 1/2 Cup White Wine
    • Salt and Pepper


    • Line the bottom of a large casserole dish with sauerkraut mixed with the chopped onion. Place carrots and potatoes on top. Add ribs. Sprinkle with wine and salt and pepper. Bake at 300º for approximately 4 hours.
    • If desired, 1-2 sweet potatoes, peeled and cut into wedges can be added to the casserole.
