Flank Steak
Ingredients
2-lb flank steak
Tequila Lime Marinade
1/8 cup Worcestershire
1/8 cup olive oil
1/8 cup water
1-oz Tequlia
1-oz lime juice
1 tbs cilantro
1 clove garlic
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon cumin
Preparation
Combine marinade ingredients in a storage bag. Score the steak across the grain. Add the steak and marinate for at least 2.5 hours before you plan to cook.
Set up your grill for a direct cook, with the grates on the lower setting (if you are using a Kamado Joe). Preheat your grill to ~600 degrees F.
Pull the steak out of the marinade 30 minutes prior to the cook. Season both sides with salt & pepper.
Sear on both sides for ~4.5 minutes. After 2.5 minutes, turn 90 degrees. After 4.5 minutes flip and do the same on the opposite side
Target temperature is 125-130 degrees in the thickest part of the steak. If it is not done after 9 minutes, add a deflector plate and move the grate to a higher setting. Cook until the steak reaches the desired temperature.
Remove the steak and let rest for ~10 minutes. Slice across the grain and serve
