Rosalia's Flan

To prepare the pan:

Boil 1 cup sugar, enough water just to make liquid, and a few drops of lemon juice. Cook until mixture becomes a luscious color. Coat flan pan. Discard extra.

For Flan:

Place the following in a blender

    • 6 Eggs
    • 1 Cup Sugar
    • 4 Cups Whole Milk (3-3 ½ Cups if Preferred)*
    • 1 Tsp Vanilla

*Coconut Milk May Be Substituted

Blend on high for approx. 2 minutes. Pour into a prepared metal pan. Bake in a 350º oven in a water bath for at least an hour or until firm. (The flan may be cooked in a steamer on the stove top, covered and steamed for 1 hour.)
