Tuscan Minestrone Soup

Ingredients

    • 2 Tbs Olive Oil
    • 1 Cup Sliced Carrots
    • 1 Cup Chopped Onions
    • 1/2 Cup Chopped Celery
    • 2 Cloves Garlic - Minced
    • 1 19-oz Can Progresso Cannellini Beans - Drained and Rinsed
    • 1 15-oz Can Progresso Black Beans - Drained and Rinsed
    • 1 14.5-oz Can Chicken Broth
    • 1/2 Tsp Dried Thyme Leaves


Preparation

In a large sauce pan, heat oil over medium-high heat until hot. Add carrot, onions, celery, and garlic; cook 4-5 minutes or until onions are tender, stirring occassionally. Stir in all remaining ingredients. Bring to a boil. Reduce heat to medium; simmer 10-12 minutes.

Yield: 4 servings (1-1/4 Cup Each)
