Pumpkin Cake



    • 2 Cups Flour
    • 1 Tsp Salt
    • 2 Tsp Baking Soda
    • 2 Tsp Cinnamon
    • 2 Cups Sugar
    • 1.25 Cups Vegetable Oil
    • 1 Can of Libby's Solid Pumpkin
    • 4 Eggs

Icing (Optional)

    • 1 8-oz Block Cream Cheese
    • 1 Tsp Vanilla
    • 1 Stick Butter
    • 1 Box Powdered Sugar



Combine ingredients, mixing well and pour into tube or bundt pan that has been sprayed with Pam. Place in the oven that has been pre-heated to 350 degrees F. Bake 55-60 minutes. Be certain fully cooked. Remove from pan. You can serve the cake as warm pumpkin bread if desired. Cover and cool if to be iced.


Allow cream cheese and butter to soften 15-20 minutes. Mix together with vanilla. Add powdered sugar. Mix. Ice the cooled cake.
