Ingredients
- Kale
- Lemon Juice
- Olive Oil
- Garlic
- Rosemary
- Basil
- Oregano
- Salt & Pepper
- Parmesan Cheese - Grated
- Sliced / Slivered Almonds
- Craisins (optional)
Preparation
- I tear the kale into smalI pieces, removing steams, wash & spin.
- For the dressing, I blend equal amounts lemon juice & olive oil ( sometimes I use a little more olive oil) and add a heaping tbs of garlic, a few sprigs of fresh rosemary, basil, oregano, salt & pepper to taste. Pour small amounts of dressing at a time over kale, mixing with plenty of grated Parmesan cheese & sliced or slivered almonds (Toasted almonds are good, as well. Last night I added Craisins, but normally I don't). I think the Parmesan is the key ingredient, mixed with the herb dressing.
