French Banana Eclairs

Puff Pastry

    • 1/2 Cup Water
    • 1/4 Cup Butter
    • 1/4 Tsp Salt
    • 1/2 Cup Flour
    • 2 Eggs

Bring water, butter and salt to a boil in a medium saucepan. Add flour all at once. Beat until mixture forms a ball. Remove from heat and cool slightly. Add eggs, one at a time, beating well after each addition. Beat until smooth and shiny. Set aside 1/3 of the batter. Smooth remaining dough onto a greased pan in individual rectangles, approximately 1-1/2" x 2-1/2". Drop the reserved dough by teaspoons on top of the rectangles. Bake at 400 degrees F for 30 minutes. Remove from oven and make a slit in the side of each rectangle. Return to the oven and cook for 10 more minutes. Cool. Cut off the top of each rectangle and remove webbing. Fill the Whipped Banana Filling. Replace the top and pour Chocolate Glaze over the eclair.

Whipped Banana Filling

    • 1 Cup Whipping Cream
    • 1 Tbs Sugar
    • 1 Large Banana - Mashed
    • 2 Tbs Cream de Cocoa

Whip cream until soft peaks form. Add sugar and whip until stiff. Fold in banana and Cream de Cocoa.


    • 1/2 Cup Powdered Sugar
    • 2 Tbs and 2 Tsp Cocoa
    • 1-1/2 Tsp Butter
    • 1/2 Tsp Vanilla
    • 1-2 Tbs Boiling Water

Combine first four ingredients. Add water to make a thin glaze.
