Grill Fried Chicken


    • 6-8 chicken thighs
    • Corn starch
    • Soda water
    • 1-1/2 cups A.P. flour
    • 1 cup panko bread crumbs
    • 1 tablespoon baking powder
    • 2 teaspoons salt
    • 2 teaspoons black pepper
    • 2 teaspoons paprika
    • 2 teaspoons A.P. Rub
    • 1 teaspoon garlic powder


    • Setup for an indirect cook. Preheat the grill to 350 degrees Farenheit. Wait to put the grates in until just before the chicken goes on the grill
    • Put corn starch in a bowl
    • To make the breading, mix together the remaining ingredients in a second bowl
    • In a third bowl, pour the soda water
    • Dredged the chicken in the cornstarch, then dip the pieces in Club Soda. From the soda, roll them in the breading.
    • Put the chicken on the grill. Once they got a nice golden brown color, I flipped the pieces and continued cooking until they reached 175ºF internal.
