Grill Fried Chicken
Ingredients
- 6-8 chicken thighs
- Corn starch
- Soda water
- 1-1/2 cups A.P. flour
- 1 cup panko bread crumbs
- 1 tablespoon baking powder
- 2 teaspoons salt
- 2 teaspoons black pepper
- 2 teaspoons paprika
- 2 teaspoons A.P. Rub
- 1 teaspoon garlic powder
Preparation
- Setup for an indirect cook. Preheat the grill to 350 degrees Farenheit. Wait to put the grates in until just before the chicken goes on the grill
- Put corn starch in a bowl
- To make the breading, mix together the remaining ingredients in a second bowl
- In a third bowl, pour the soda water
- Dredged the chicken in the cornstarch, then dip the pieces in Club Soda. From the soda, roll them in the breading.
- Put the chicken on the grill. Once they got a nice golden brown color, I flipped the pieces and continued cooking until they reached 175ºF internal.
