- 1 3-lb Boneless Pork Roast - Trimmed
- 1-lb Pinto Beans Uncooked
- 1 4-oz Can Chopped Green Chilies
- 1/2 Cup Chopped Onion
- 2 Cloves Garlic - Minced
- 2 Tbs Chili Powder
- 1 Tbs Salt
- 1 Tbs Cumin
- 1 Tsp Oregano
- 7 Cups Water
Place all ingredients in a crock-pot. Cover and simmer all day, until roast is very tender and falls apart. Stir thoroughly.
Serve over tortilla chips and with a variety of the following condiments:
- Sour Cream
- Grated Cheese
- Hot Sauce
- Chopped Tomatoes
- Chopped Avocado
- Chopped Onion
- Shredded Lettuce
