Hopping John


    • 1 Cup Dried Black-Eyed Peas
    • 1/4 lb Diced Salt Pork
    • 1 Quart Boiling Water
    • 1 Tsp Salt
    • 1 Tbs Chili Powder
    • 1/2 Cup Chopped Onion
    • 2 Cups Cooked Rice


Wash and sort peas; cook with salt pork in boiling water until peas are almost tender. Add seasonings and onion. Continue to cook until peas are done and most of the liquid is absorbed. Add rice and heat.
